That thing is really nice if you shade with alpha colors (10% black or something) so you don't have to make a shitload of layers. Try that out it's nice.
It's a feature hailing from the program called Adobe Illustrator.
It's extremely handy for making complex illustrations efficiently.
In the tools panel, on the lower part called "options", there's a button that lets you turn on or off this feature. By the way they become groups, not symbols.

You are using brush tool right?
Pick the brushtoo, and you should see a circle inside a box looking icon under the color picker (not the color mixer!).
Click that icon and that thing is gone.
That thing is just that you have accidentally turned the special option for brush tool on, that changes everything to symbols right after drawing.
