Becasue color inhances the beauty. but not on all things. it depends on yours and other peoples vision of the peice. i personally LOVE color.
Some like it mostly because of all the flashy effects it can give out. But some stuff, such as realism, can do it just as well without it. That, and some people like shiny things.
