for humans? there are those wood puppets (y http://upload.wikimedia.org/wikipedia/commons/archive/9/94/20051011175556!Holzpuppe.jpg ) they are pretty good to learn proportions,or you could look at pictures and search for lengths that are similiar to each other (for example the head should roughly be as 'long' as the lowerarm and such things) and of course practice,practice,practice ^^
