So this is my spin on Eggs Benedict. My mom is somewhat allergic to wheat, and as this -was- for Mother's Day, I decided to replace the traditional English Muffin base.
From the bottom up:
Fried tomato, poached egg, chive-hollandaise suace, brown-sugar and cayanne bacon and sliced avocado.
Mmm. Mmm. MMMMMM!! This had so many unique and delicious flavours going on. I was super proud of myself for not ruining the sauce and for making a chaotically cohesive palate.
