This was my first attempt at the elusive SPRING ROLL.
I used a traditional Vietnamese recipe and folding technique.. however, that backfired a bit as they were for my mom and she liked the filling, but not the fact that I didn't fry them so they had a bit different texture than she is used to.. (Kind of her to enjoy them anyway, though..)
As this was my first attempt, a few of them aren't wrapped as well - I've gotten better since then though. : )
I served these with Nuoc Cham sauce and a Red Curry with Daikon and Shitake Mushrooms. The Curry was probably tastier.. but I've made curry so many times, it wasn't new and exciting enough to warrant posting. ;p
( **The Spring Rolls and Curry were Vegetarian, but the Nuoc Cham sauce was not because one of the key ingredients is Fish Sauce! Ah well! Close!
