Pancakes

Pizza day may be the best day of the week, but let's face it - nothing beats the good ol' pancake!

I didn't realize pancakes could be made using a lone egg, which is all I had after I used two to make an omelette on Wednesday, and a box of them went off yesterday. So, after finding a suitable recipe (and a lengthy search for some baking powder, natch), I made these.

I messed up on two separate occasions during the flipping stage - folded pancake FTW - but otherwise, they didn't turn out badly at all. Maybe a bit too think, and not fluffy enough, but still pretty good. :)
